Believe it or not the weather down here in California is pretty chilly. We are going to see rain for a good week starting tomorrow. It might, just might, reach a high of 60 degrees. When the weather cools down it usually means it is time for some hearty filling warm soup.
I had not ever made soup from scratch before so I was a bit nervous. This soup was incredibly tasty and simple. Most of all it was quick to prepare. I am already planning to make a second batch of this in a few days.
Broccoli Cheddar Soup:

1 can chicken broth
1 small onion, diced
1/3 cup flour
1/4 cup butter
pepper to taste
2 cups milk
1 1/2 cups shredded sharp cheddar cheese
1/2 cup shredded swiss cheese
2 cups steamed chopped broccoli
Simmer chicken broth and diced onion for 15-20 minutes in a covered small saucepan until onions are soft. Heat milk in microwave for 2 minutes. In a separate medium sized pot, melt butter. Add flour and pepper, whisk together and cook for 3 minutes. Whisk in warmed milk. Stir and heat on medium-high until the soup begins to thicken. Next add chicken broth and onions stirring until well blended. Add cheeses and steamed broccoli. Serve immediately. Serves 4.
