Chocolate Peanut Butter No Bake Cookies

These always seem to disappear quickly and the kids really enjoy them. They are quick to make and you probably already have all of the needed ingredients on hand. The peanut butter is good protein and the oats have good fiber but the kids just think they are eating a sweet treat! I prefer these cold from the refrigerator but they can be left out at room temperature as well.


Chocolate Peanut Butter No Bake Cookies:
2 cups sugar
1 stick butter
1/2 cup milk
4 tablespoons cocoa powder
1 cup peanut butter
1 teaspoon vanilla extract
3 cups quick cooking oats


Put your sugar, butter, milk and cocoa powder into a medium saucepan and bring to a boil.
Boil for one minute and then add vanilla and peanut butter. Stir in oats and remove from heat. On wax or parchment paper drop the oat mixture by teaspoons. Let cool. It is important to stay near the pan as it can boil quickly and you don't want it to burn. Also once you remove from the heat begin scooping onto parchment paper right away as it will become more difficult to work with as it cools and hardens. Enjoy!
