Eggnog Cupcakes

Alright so I might be on an eggnog kick right now. But hey, this is a special time of year and you can't have too much eggnog right? These cupcakes worried me because they do not call for any additional eggs. I made a rule a few months ago about not trying cupcakes on their own before they are frosted. I cannot seem to keep this rule and these were no exception.


To say disappointment spread over me after the first bite is an understatement. I had high expectations after the eggnog cheesecakes and these cupcakes seemed bland. I decided to give them a second try, this time with the frosting. WOW. What a difference.
The unique texture of this cupcake paired up with the more intense flavor of the frosting were a perfect match! This is another favorite to add to our holiday baking list for years to come.


Eggnog cupcakes:


1 1/4 cups eggnog
1/4 cup vegetable oil
1 tbsp apple cider vinegar
1 tsp vanilla
1/4 tsp allspice
1 cup sugar
1 1/3 cups flour
1/4 tsp baking soda
1/2  tsp baking powder
1/2 tsp salt


Preheat oven to 350 degrees. Mix together eggnog, vegetable oil, cider vinegar and vanilla. In another bowl mix together the dry ingredients. Add the wet mixture into the flour mix and stir until combined. Be extremely careful not to over mix your batter. Bake for 18-20 minutes or until toothpick comes out clean.


Frosting:


1/4 cup butter
2 cups powdered sugar
3 tbsp eggnog
pinch of cinnamon


Beat all ingredients together until smooth. Add more eggnog or sugar as needed to reach the right consistency.
